Co-op Loaded Baked Potato

There’s nothing quite like a perfectly baked potato—crispy on the outside, fluffy on the inside, and loaded with all your favourite toppings. This Co-op Loaded Baked Potato recipe brings together classic comfort and simple, local ingredients to create a dish that’s just as perfect for a weeknight dinner as it is for sharing around the table.

Ingredients

  • 4 large russet potatoes
  • 4 tbsp unsalted butter, melted
  • 1/2 cup sour cream
  • 3/4 cup shredded cheddar cheese, divided
  • 6 slices crispy bacon, crumbled
  • 2 green onions (scallions), sliced (white & green parts separated)
  • 2 tbsp fresh chives, chopped
  • Salt & freshly ground black pepper
  • Optional: splash of milk or cream (for extra fluffiness)

instructions

1. Bake the Potatoes

  • Preheat oven to 400°F (200°C)
  • Scrub potatoes, dry, and prick with a fork
  • Rub lightly with oil + salt (skip foil for crispier skins)
  • Bake directly on rack for 50–60 minutes, until fork-tender

2. Prepare the Filling

  • Let potatoes cool slightly, then slice lengthwise
  • Scoop out the insides into a bowl (leave a thin shell)
  • Add:
    • melted butter
    • sour cream
    • white parts of green onions
    • 1/2 cup cheddar
    • half the bacon
  • Mash until creamy (add a splash of milk if needed)
  • Season with salt & pepper

3. Stuff & Bake Again

  • Spoon mixture back into potato skins
  • Top with remaining cheese and bacon
  • Return to oven for 10–15 minutes, until hot and melty

4. Finish & Serve

    • Top with:
      • green onion tops
      • fresh chives
      • extra sour cream if desired
